The Dark ‘n Stormy

The dark ‘n stormy is a classic combination of dark rum and ginger beer over ice with a splash of lime juice and garnished with a lime. The drink itself could not be more simple. While this is the “classic” recipe, you could change it up with a lemon-lime soda if ginger beer is too strong for you. Light rum contradicts the name of the drink, but it still tastes good if dark rum is too much for you. Plus, you can shake it with ice and serve it in any glass. No need to let the ice water down your drink.

What Are We Eating?

If you plan to celebrate the dark ‘n stormy on June 9th, you need some food to go with it. For our palette, we prefer a three-course meal that anyone would love:

• Grilled pineapple salad over arugula with pineapple juice vinaigrette
• Grilled pork chops, seasoned with salt, pepper, lime juice, and cilantro
• Caribbean rice bowl with grilled corn, fresh tomatoes, fresh tomatillos, lime juice, and a pinch of salt

Remember that you can grill the pineapple slices for about a minute on one side and chop for the salad. Pineapple juice vinaigrette involves equal parts pineapple juice and white wine vinegar. Mix half a portion of olive with a bit of salt and pepper. Whisk together and dress your salad accordingly.

You can marinate your pork chops if you want, but the flavor sticks even if you season at the grill.

For your rice, make sure it is cooked (we prefer yellow rice,) toss it in a bowl with your accouterments, and serve.
